Catechins (also known as tea polyphenols) are secondary plant compounds that belong to the flavonoids and act as antioxidants (read more under “Antioxidants“). There is a whole group of catechins, the most important is probably epigallocatechin gallate (EGCG). Catechins are present as bitter substances in all 5 major tea varieties, which all come from the same tea plant Camellia sinensis. However, the bioavailable content varies greatly and depends on various factors. The teas go through various stages of fermentation . The more complete the fermentation process, the greater the influence on the catechins. Since in the production of green tea the fermentation is stopped immediately after cutting, the catechins can be found here in high concentrations. Matcha has a health-promoting effect thanks to catechins

Matcha (Japanese for “ground tea”) is the highest form of green tea enjoyment. The green tea is carefully ground in granite mills, the varieties used are very select and must meet special guidelines. The finished Matcha powder is stirred with only a little hot water and then whisked with special bamboo whisks. Only then is more water added and the healthy drink can be enjoyed.
