The chokeberry plant (Aronia melanocarpa = black chokeberry) is a small bush about 1-2 metres tall that grows very well in our latitudes. The berries grow in umbels, similar to elderberries. Aronia berries have a high content of polyphenols. Other kingnature products containing Aronia are Aronia Vida (capsules) and Aronia Shot (sticks).
We obtain the couverture for the Aronia Chocolate from Aeschbach Chocolatier AG in Root. The chocolate manufacturer has been creating high-quality Swiss chocolate from the best and fairest ingredients since 1972.

Our aronia berries come from around 50 farmers in Switzerland who attach great importance to quality and sustainability. Before harvesting, the producers check the ripeness of the fruit. To do this, the sugar content is measured with a refractometer, just like in viticulture. The harvest only begins if the so-called Öchsle degree is correct.
Particular attention is paid to the cherry vinegar fly, a pest that can infest the berries shortly before harvest. To keep them away, traps are set up or lime water is sprayed – a method that makes the berries unattractive to the flies, but leaves no residue on the end product.
Today, harvesting is mostly done mechanically. The berries are stripped from the bush with a rake, while a stream of air removes the leaves directly. After harvesting, the berries are de-stemmed and deep-frozen for storage in order to optimally preserve their freshness and ingredients.
